I actually cook a lot with a focus on arrangement and appearance (it's my pastime...) so I was actually thinking really hard upon seeing each of these.

You will need:
Unflavoured, uncoloured gelatin
Flavouring of your choice
Food colouring (pink, yellow, red, other colours optional)
Some kind of pink ice cream
Candy (for the eyes and mouth, I'm not being specific here because everyone's got different tastes)
Pink soda of your choice
Shallow (about 1/2 - 1in) cheap aluminum baking pans
Fluted glass
Small square cookie cutter (knife will work too)
This will take maybe a day depending on when you start and how fast the gelatin sets. Use a fluted glass like pictured, some gelatin mix, and some food colouring (you want to use clear, unflavoured gelatin to get appearance right, flavour it to taste when you're ready). Prepare the gelatin, but do not colour or flavour it in the pot. Take about 1/3 a cup of it while it's still liquid (depending on the size of the glass), colour and flavour it separately, then pour it into the bottom of the glass to fill the fluted bottom and give a flat surface for the next step. I'd probably use pink as a base. Put the glass in the fridge (covered or uncovered is fine), allow gelatin to set.
With the gelatin you didn't use, you'll want to seperate it into two shallow aluminum baking pans (like the kinds you can buy at the grocery store for a couple bucks), flavour it, colour it, put it in the fridge, let it set.
When everything is solidly set, take the gelatin in the pans, and with a small cube shaped cookie cutter (you can buy or make these, or you can use a knife), cube up the gelatin, and drop it into the fluted glass. If you're really fussy like me and want it to stack properly, prod the cubes so they stack to the top. Use any and all colours you like depending on how many different colours of gelatin you made, be random with it. Leave enough room for the ice cream/sorbet/whatever scoop on top.
With that all done, pour in your pink soda (I know, I know, inb4 "that's not how you make a float!!") almost to the top of the the gelatin stack, scoop out some ice cream and plop it on top, jam the candies you chose for the facial features, and you're done!
